The best homemade granola with cranberries

Good morning squad, it's breakfast time! I'm in a mood where I swear by granola right now. So I was really into testing recipes recently and I think I found the one that speaks to my heart and my stomach: Homemade Cranberry Granola!





INGREDIENTS

For great homemade granola, you will need:


2 cups of oatmeal

1/2 cup coarsely chopped pecans

1/4 cup hazelnuts

1/4 cup squash seeds

1/2 cup cranberries

1/4 cup coconut oil

1/4 cup honey

1/4 teaspoon of salt

1/2 teaspoon of cinnamon

1 teaspoon of vanilla extract


Steps:


- Preheat the oven to 160 degrees.

- In a bowl, mix all the ingredients in the order shown just above.

- Cover a baking sheet with baking paper and spread the mixture on it, flat.

- Bake for 45min. Every 15min, quickly remove the baking sheet from the oven to mix the granola a little.


The advantage of homemade recipes is that they can be adjusted to our taste!

So if you prefer agave syrup with honey, raisins with cranberries, or almonds with pecans, adapt the recipe to your desires!

It's good, it's simple, and it keeps a super long time. In an airtight box, mine remains crisp after 2 weeks.


You can always opt for something a little more gourmet other ingredients, like coconut & chocolate chips ... 


Our Homemade Granola with nuts, maple, and dried fruits

INGREDIENTS

 


For the nuts mixture:

4 cups of quick-cooking oatmeal

1/2 cup coconut, grated

1/2 cup coarsely chopped almonds

1/2 cup pecans, coarsely chopped

1/2 cup of sunflower seeds

1/2 cup of pumpkin seeds

1/4 cup brown sugar

1/2 tsp. cinnamon, ground

1 pinch of salt


For the maple:

1/2 cup maple syrup

1/2 cup of vegetable oil

1 C. teaspoon vanilla extract


For the fruit mix:

1/2 cup cranberries

1/2 cup of apricots, diced

5-10 Medjool dates, pitted and diced


STEPS:

- Preheat the oven to 300 ° F.

-In a large bowl, combine all of the “nut” ingredients together. Reserve.

-In another bowl, combine all the "maple" ingredients together then pour over the nuts. Mix well.

-Spread evenly on a large baking sheet.

-Bake for 50 to 60 minutes, taking care to stir every 15 minutes so that the granola cooks evenly and is golden brown.

-Remove from the oven and let cool for a few minutes before adding the fruit mixture.


I advise you to enjoy it with vanilla almond milk (my favorite way) or with Greek yogurt and fresh fruit. Have fun personalizing the recipe by swapping the nuts for the ones you prefer or swapping the apricots for grapes or maple syrup for honey or agave nectar.
